The design for Kathleenâââ‰â¢s Kitchen has resulted in a casual yet elegant, all-day dining space, richly appointed with antique copper pots and pans, alongside the original fittings and fixtures. It immerses the guest into the activity and bustle of the food preparation, while savouring the elevated bistro atmosphere, a true reinvigoration of the historic kitchen for a new generation.
The brief was to create an all-day bistro dining experience within the overall hotel offer of fine dining, golf club and the conference & event dining. The atmosphere was to be friendly and informal but showcasing the activity and creativity of the chefs at work. The space is within the historic kitchens of Carton, home of the Dukes of Leinster.
Located in the bright and airy kitchens, the new venue retains the original 18th century features, including stoves, spits, ovens and grilles. These are used to display antiq cookware and artisanal food produce. The space is naturally ventilated to the estate outside with a feature open cooking island to allow guests experience their meals being prepared in front of them.
